Pickled Red Onion

Pickled Red Onion is a delightful condiment to serve on tacos or alongside or on top other Mexican dishes.

Pickled Red Onion recipe

Yield: about 1 pint

Ingredients

  • 1 red onion, thinly sliced
  • 1 cup white vinegar
  • 1 teaspoon whole peppercorns
  • 2 cloves garlic, minced
  • 1 tablespoon salt
  • 1 1/2 tablespoons granulated sugar
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Add sliced onions to a Mason jar.
  2. Add the remaining ingredients, including red pepper flakes, if desired, to a small pot over medium high heat. Bring to a boil, making sure that the salt and sugar dissolve completely. Let the mixture come to a simmer, then remove from heat.
  3. Allow onion mixture to cool to room temperature; cover with lid and refrigerate until ready to use. Wait for 2 hours before using.
  4. Serve with street tacos or alongside Mexican food.
