Light and Healthy Easter Brunch Idea

If you are looking to lighten up a little this Easter and want something a little different than the usual heavy omelets and spring lamb fare, here is a new twist on a standard Easter Brunch recipe.

As we all know, including whole grains in your diet is not only good sense nutrionally but gives you a feeling of fullness far surpassing that of white flour based dishes. To make the following recipe, you should use a high-quality "artisan" type whole grain bread. This will not only up the nutritional ante but will also help hold the toast together better. Using a commercial, soft whole wheat bread will not give you the results you desire.

Luckily, you can get this recipe together the day before Easter so you can just put in oven on Easter morning and hang out with friends and family while the oven does the work. Because the recipe calls for skim instead of whole milk, and eliminates egg yolks entirely, you are cutting the calories by half. Also, by baking the toast, you are reducing 80 percent of the fat than if you had used a traditional griddle coated in butter.

Baked Apple French Toast

(Serves 8-12)

3 cups skim milk
2 cups liquid egg whites like Egg Beaters
3 tablespoons honey
1 1/2 teaspoons vanilla extract
1/4 teaspoon sea salt
1 (1 pound) loaf sliced whole grain bread
1 cup chopped dried apples
1/2 cup raisins
1 1/2 teaspoons cinnamon (or more if you desire)
1/2 teaspoon nutmeg
1 tablespoon confectioners' sugar

• Whisk milk, honey, egg whites, and vanilla in large bowl.

• Cut crusts off 8 slices of bread (or leave on if you want it more rustic-looking).

• Cut remaining bread into one-inch pieces and toss with apples, raisins, cinnamon and nutmeg in another large bowl.

• Coat a 9 x 13-inch baking pan with cooking spray. Put bread mixture in pan and layer the 8 slices evenly on top. If you have to trim off any, that’s fine. Re-mix the egg and milk mixture then pour evenly over bread. Press it all down with a wooden spoon.

• Cover with parchment paper, then foil on top of that and refrigerate for 8-24 hours.

• Preheat oven to 350 degrees F.

• Bake covered for 40 minutes, then uncover and continue baking until it puffs up, and is lightly browned, usually about 20 minutes more.

• Let stand for 10 minutes then dust with powdered sugar and serve.
