Bran and Date Muffins

Remember taking these over to a new neighbor one morning many years ago, still warm, wrapped in checkered cloth and nestled in a basket. Days gone by....

1 cup boiling water
1 cup dates
2 1/2 teaspoons baking soda
1/2 cup shortening
1 cup granulated sugar
2 eggs
2 cups 100% All Bran
1/2 cup chopped nuts
1/2 tablespoon salt
2 cups buttermilk
2 1/2 cups flour
1 cup 40% Bran Flakes

Stir the boiling water, dates and baking soda until smooth; let cook.

Cream together the shortening, sugar and eggs. Add All Bran, nuts, salt, buttermilk, flour and Bran Flakes. Add the date mixture and bake in muffin pan for 15-20 minutes in a 400 degree F oven.

Refrigerate leftover dough; it will keep for a few weeks.
