1 cup chopped onions
3/4 cup yellow cornmeal
2 teaspoons chili powder
1 cup evaporated skim milk
1/4 cup water
1 (16 ounce) can whole kernel corn, drained
1 (16 ounce) can black beans, drained and rinsed
1 (16 ounce) can stewed tomatoes
1 (4 ounce) can diced mild green chiles
Heat oven to 350 degrees F. Lightly spray an 8-inch square baking pan with non-stick spray.
In a large bowl, combine all ingredients. Mix well. Place in prepared pan. Bake uncovered for 45 minutes.

Black Bean Casserole Ole recipe
Yield: 6 servings1 cup chopped onions
