El Torito's Combo Veracruzana is one of the most popular items on the Veracruz menu.
To prepare, warm tortilla on a griddle until soft and pliable. Spread 1 tablespoon serrano-pepita dip across length of tortilla and top with 4 1/2 ounces, which is a little over 1/2 cup, of shrimp filling. Spread engrudo along one edge of tortilla and roll tightly starting with the opposite edge from the engrudo. Do not allow any filling to protrude from ends to prevent burning during cooking process. Deep fry taquitos at 350 degrees F for approximately 2 1/2 minutes or until crispy. Drain well and serve.
Presentation: Cut each taquito into five pieces on an angle. Place small ramekin with red pepper dip in center of shallow bowl. Sprinkle 1/2 ounce shredded lettuce and 1/2 ounce fried tortilla strips around ramekin. Arrange taquitos around ramekin with cut sides up and tips pointing outward. Sprinkle 1/2 ounce fruit relish and 1/2 teaspoon cotija cheese over tips of taquitos.
Yield: 6 servings
