Cake:
1 pound butter
1 cup sugar
6 ounces coffee
2 ounces Frangelico or other liquor
1 pound semisweet chocolate
8 eggs
1 teaspoon vanilla extract
Ganache:
6 1/2 ounces semisweet chocolate
5 1/2 ounces heavy cream
Cherry Sauce:
1 cup sweet dried cherries
2 cups red wine
1 teaspoon powdered sugar
For cake: Melt chocolate and butter in a double boiler.
Combine sugar, coffee, vanilla extract and liqueur in a large bowl. Add melted chocolate and butter to coffee mixture. Whisk eggs until well mixed and add to chocolate mixture. Mix well. Pour into a buttered and plastic wrap-lined 9-inch cake pan. Bake in a water bath in a 300 degree F oven for 1 hour.
Remove from oven and chill for at least 2 hours before unmolding.
Place cake upside down on a wire rack and cover with ganache. Chill for 30 minutes then top with Cherry Sauce before slicing.
For ganache: Mix together in a double boiler until chocolate is completely melted.
For Cherry Sauce: Mix wine with sugar and reduce by half in a saucepan over medium heat. Add cherries and blend together.

Fleming's Prime Steakhouse Velvet Chocolate Cake
