Serves 6.
2 pounds salmon filet
1 (8-ounce) jar apricot preserves
2 tablespoons country-style Dijon mustard (with seeds)
2 tablespoons soy sauce
3 tablespoons unsalted butter
1 small package slivered or sliced almonds, toasted
Put all sauce ingredients in a small saucepan and gradually heat to a boil. (If you desire thinner consistency, add 1 tablespoon water and stir.) Remove pan from heat and allow to cool.
Divide sauce into two bowls, one to use for brushing glaze on the salmon for cooking, the other for serving extra sauce on the cooked salmon.
Grill, broil or bake salmon glazed lightly but evenly in sauce. (Cook fish about 10 minutes per inch.)
To toast almonds, place on baking sheet and cook in a 325-degree oven about 10 minutes until browned (check frequently to make sure they're not overbrowning).
Serve cooked salmon with a spoonful of extra sauce on top and a sprinkle of toasted almonds. Or, serve with rice, stirring almonds into rice after cooking.
