Texas Roadhouse Roasted Chicken

1 (2 to 3 pound) whole chicken

Seasoning:
Salt
Pepper
Paprika
Cayenne
Sage
Chile power
Sugar
Poultry seasoning

Sauce:
Chicken broth
Garlic
Carrots
Celery
Onion
Salt
Pepper
Fresh thyme
Fresh rosemary

Trim chicken of excess fat, and insides. Baste raw chicken with oil, season in and out.

Cook all sauce ingredients together until it reduces by half, strain, add whole butter to finish.

Split the whole chicken in two, remove the "backbone", place on some legendary Texas Roadhouse mashed potatoes, and serve.
