8 cups all-purpose flour
4 cups granulated sugar
2 tablespoons plus 2 teaspoons baking soda
2 tablespoons plus 2 teaspoons cinnamon
2 teaspoons salt
12 eggs
8 cups grated carrots
4 cups grated apples
2 cups almonds, sliced and toasted
2 cups coconut, shredded and toasted
2 tablespoons plus 2 teaspoons vanilla extract
2 2/3 cup corn oil
Plump raisins in hot water, then drain.
In a large bowl, whisk eggs, then oil and vanilla extract. Stir in carrots, apples, almonds, coconut and raisins.
In another large bowl, mix dry ingredients together well. Pour wet ingredients over dry, and mix with a large spoon using big strokes until just combined (don't over-mix). Spoon into greased muffin tins.
Bake at 400 degrees F for about 15 minutes.
Makes approximately 6 dozen muffins depending on size.

Morning Glory Muffins
