3 tablespoons olive oil
4 cloves garlic, minced
7 fresh large tomatoes, skin and seeds removed, cut up
Fresh parsley, minced
Fresh basil, minced
Salt and black pepper to taste
3 jalapeno or serrano peppers
8 eggs
Put olive oil in to a large frying pan. Saut� garlic until golden brown.
Add tomatoes, parsley, basil, salt and pepper and peppers to the skillet.
Cook until the tomatoes are done (about 45 minutes).
Break the 8 eggs into a side dish without breaking yolks, then slide them
into the frying pan. Cover the pan with a lid and simmer slowly until the eggs
are cooked.
Serves 4.
