1 tablespoon vegetable oil
1 small clove garlic, crushed
2 tablespoons chopped parsley
1 pound scallops
Buttered bread crumbs
Mix first 4 ingredients in a bowl. Add scallops.
Marinate for 1 hour in refrigerator. Spoon scallops and marinade into ramekins (individual dishes used for both baking and serving). Place under broiler and broil for 3 minutes. Turn and sprinkle with bread crumbs. Broil for 3 minutes more.
Yields 4 servings.
