1 cup plain bread crumbs
4 teaspoons sea salt
2 teaspoons cayenne pepper
Combine cornmeal, bread crumbs, sea salt and cayenne pepper. Pour into a one-pint glass jar.
Attach a gift tag with the following instructions:
Fried Fish Fillets
Lightly beat 2 eggs in shallow dish. Dip fish fillets in the egg, shake off excess and then dredge in cornmeal mixture. Pan fry until golden brown. Drain on paper towel-lined plate.
Serve filets hot with tartar sauce and lemon wedges.
