1 1/3 cups water
7 cups crumbled day old whole wheat bread
1 teaspoon salt
6 tablespoons chopped onion
1 cup margarine
8 half chicken breasts, de-boned
Simmer celery in water 20 minutes. Drain, reserving 2/3 cup liquid.
In a large bowl combine bread crumbs, celery, celery liquid and salt.
Cook onion in margarine until tender. Add to bread mixture.
In a baking pan make 8 mounds of dressing. Place an uncooked chicken breast over each mound. Pour Orange Wine Sauce over chicken and mounds of stuffing. Bake at 350 degrees F for 1 1/2 hours.
Serves 8.
Orange Wine Sauce
2/3 cup granulated sugar
3 tablespoons flour
2 eggs, beaten
3 cups orange juice
1/2 cup white wine
Mix sugar and flour in double boiler; add eggs, orange juice and wine. Cook, stirring constantly, until thickened.

2 cups diced celery1 1/3 cups water
