1 cup fresh maple syrup
1/2 cup milk
1/2 cup light cream
1 tablespoon sweet butter
1 tablespoon vanilla extract
3 egg yolks, beaten
1 (9-inch) baked pie shell
Pour maple syrup in small saucepan and bring to boiling point. Add milk and
cream; stir and cook over low heat. Do not boil. Add butter, vanilla extract
and eggs; mix and cook over low heat until mixture thickens.
Pour mixture into baked pie shell. Set aside.
Heat oven to 180 degrees F.
Meringue:
3 egg whites
1/2 cup granulated sugar
Place egg whites and sugar in double boiler. Mix with electric beater at
low heat until mixture forms peaks. Spread mixture over pie and cook in oven
until meringue is brown.
