2-crust pastry
36 Ritz crackers
2 cups granulated sugar
2 cups water
2 teaspoons cream of tartar
2 tablespoons lemon juice
Grated rind of 1 lemon
Butter
Cinnamon
Break crackers into pastry crust. Combine water, sugar and cream of tartar
and boil gently for 15 minutes. Add lemon juice and rind. Cool.
Pour filling over the crackers. Dot with butter and sprinkle with cinnamon.
Cover with the top crust. Cut slits in the top crust. Bake at 425 degrees F
for 30 to 35 minutes.
Serve with "cheese apples." Roll small balls of cheese in paprika. Insert
a whole clove in each for the stem.
