1/2 pound salt pork
1 cup onions, chopped
1 cup chopped celery
1 cup chopped bell pepper
1 clove garlic
1/2 pound okra, cut up
1 quart or 2 cans tomatoes
2 cans Ro-Tel tomatoes
1 pound popcorn shrimp *
3 tablespoons margarine
Salt and pepper to taste
Soak peas overnight.
Add salt pork; start cooking. Sauté onions, celery, bell pepper and garlic. Add to peas with shrimp. Add both the regular canned tomatoes and the Ro-Tel tomatoes and simmer until done.
* Substitute with your favorite meat, thinly sliced chicken, round steak or hamburger meat.

Black-Eyed Pea Gumbo
4 cups black-eyed peas1/2 pound salt pork
1 cup onions, chopped
