2 (3-ounce) packages strawberry flavored Jell-O
1 cup boiling water
2 (10 ounce) packages frozen, partially thawed strawberries
1 (20 ounce) can crushed pineapple, drained
3 medium bananas, mashed
1/2 cup coarsely chopped walnuts or pecans
2 (10 1/2 ounce) packages unbaked cheesecake mix
Dissolve the gelatin in the boiling water, then add the fruit and nuts. Pour
1/2 of this mixture into a 13 x 9 x 2-inch pan or large glass bowl. Chill
until firm.
Set aside remaining gelatin mixture at room temperature.
Prepare the cheesecake according to the package directions, reserving the
graham cracker crumbs for another use. Spoon the cheesecake filling over the
congealed fruit mixture. Spoon the reserved gelatin mixture over the
cheesecake filling and chill until firm.
