Baked Brie with Peaches and Almonds

Baked Brie with Peaches and Almonds

Yield: 8 to 10 appetizer servings

Ingredients

  • 1 wheel Brie cheese, about 8 ounces
  • 3 medium-size fresh Georgia peaches, peeled and diced
  • 3 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup slivered almonds, toasted

Instructions

  1. To toast the almond slivers, heat the oven to 350 degrees F. Place the almonds in a single layer in a jelly roll pan, and place in the heated oven. Bake for 8 to 10 minutes, stirring a few times, until fragrant and toasted.
  2. Let almonds cool and keep oven at 350 degrees F.
  3. Place Brie wheel in a small casserole dish or baking pan.
  4. In a small bowl, combine peaches, brown sugar, and cinnamon. Spread mixture over Brie. Sprinkle with almonds.
  5. Bake in the preheated oven for about 10 to 12 minutes, or until peach mixture is just starting to bubble and cheese is softened throughout.
  6. Serve warm with bread and/or crackers.
