2 1/2 ounces dark rum
1/4 cup freshly squeezed or bottled lime juice
1/4 cup granulated sugar
9 peach cubes (recipe follows)
3/4 cup crushed ice
Combine all ingredients in blender; blend until smooth. Pour into stemmed glasses. Garnish with peach and lime slices. Makes three 6-ounce drinks.
NOTE: For non-alcoholic version, substitute pineapple juice for rum and decrease sugar to 2 tablespoons.
Peach Cubes:
4 fresh peaches, sliced
1 tablespoon lemon juice
Combine peaches and lemon juice in blender; puree. Pour into ice cube trays; freeze. Makes 18 cubes.
NOTE: If using very small peaches, use 8 to produce the correct amount of puree.
