You don't need a special occasion! Cupcakes are a fun and easy way to make
and eat cake anytime.
3 cups Original Bisquick mix
1 cup granulated sugar
1 cup milk or water
1/4 cup shortening
2 teaspoons vanilla extract
2 eggs
Favorite frosting, if desired
Heat oven to 375 degrees F. Place paper baking cup in each of 12 regular-size
muffin cups, or grease and flour muffin cups.
Beat all ingredients except Frosting in large bowl on low speed 30 seconds,
scraping bowl constantly. Beat on medium speed 4 minutes, scraping bowl occasionally.
Fill muffin cups about 1/2 full.
Bake about 15 minutes or until wooden pick inserted in center comes out clean.
Immediately remove from pan; cool. Frost.
High Altitude (3500-6500 ft): Heat oven to 400 degrees F. Increase baking mix
to 3 1/4 cups and milk or water to 1 1/4 cups. Decrease sugar to 3/4 cup. Continue
as directed, except beat on medium speed 2 minutes. Bake about 20 minutes.
