Bisquick Topping:
3 eggs
1/3 cup mayonnaise
1 cup milk
1 cup Bisquick
Mix eggs, mayonnaise and milk together in a bowl with wire whip. Blend in Bisquick.
Set aside.
1 (8 ounce) can corned beef
1 (32 ounce) can sauerkraut, drained
8 ounces Swiss cheese, grated
2 large apples, grated
In 9 x 13-inch greased casserole, spread half of the corned beef, next 1/2 of
sauerkraut, next layer 1/2 of grated apples and 1/2 of Swiss cheese. Continue
with second layer of meat, sauerkraut, apples and cheese. Top with Bisquick
topping. Bake at 400 degrees F for 30 minutes.
This casserole can be prepared ahead and refrigerated until ready. It is also
delicious reheated.
