2 cups diced extra firm tofu
1 medium onion, chopped (about 1/2 cup)
1 (4 ounce) can chopped green chiles, drained
1 cup (4 ounces) shredded Cheddar cheese
1 cup sour cream
1 (12 ounce) can Mexican-style corn drained
2 cups Bisquick Original baking mix
1 1/2 cups milk
1 teaspoon chili powder
2 eggs
Heat oven to 350 degrees F. Grease a 13 x 9 x 2-inch baking pan.
Layer tofu, onion, chiles, cheese, sour cream and corn in pan. MIX remaining
ingredients until smooth. Pour over corn. Bake about 35 minutes or until knife
inserted in center comes out clean. Cool 5 minutes before cutting.
