1 (3 pound) broiler-fryer, cut up
3 small onions, quartered
3 medium carrots, cut in 1-inch pieces and then halved
4 parsley sprigs
1 (13 3/4 ounce) can chicken broth
2 cups water
2 bay leaves
2 1/2 teaspoons salt
1/4 teaspoon thyme
1/4 teaspoon poultry seasoning
1/8 teaspoon pepper
3 tablespoons cornstarch
1/3 cup water
Dumplings:
1 cup biscuit baking mix
1/3 cup milk
1/4 teaspoon poultry seasoning
Combine chicken, vegetables, parsley, water and seasonings in a 4-quart casserole.
Cook in microwave oven on Full power for 25 minutes on until vegetables are
tender. Remove chicken.
Add mixture of cornstarch and 1/3 cup water. Blend well. Cook in microwave oven
on Full power for 3 minutes or until thickened. Return chicken to casserole.
Mix together biscuit mix, milk and seasoning until moistened. Spoon mixture
over casserole. Cook in microwave oven on Full power for 3 to 4 1/2 minutes
or until dumplings are done.
