1/4 cup butter
1/4 cup granulated sugar
1 egg
1 avocado, pureed
1 cup toasted silvered almonds
1 cup milk
2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
Dash of grated lemon zest
Heat oven to 400 degrees F and prepare muffin pans.
Cream butter and sugar together. Beat in the egg. Blend in the avocado, almonds and milk. Add dry ingredients and mix gently until all ingredients are moistened and combined. Bake for 20 to 25 minutes. Add lemon zest.
