1 1/2 cups flour
1/2 cup granulated sugar
1/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup apple juice
1/4 cup water
1/4 cup (4 tablespoons) melted butter or margarine
1 tablespoon white vinegar
1 teaspoon vanilla extract
1/2 cup semisweet chocolate chips
Spray a 12-cup muffin tin with vegetable-oil spray. Heat oven to 375.
Sift flour, sugar, cocoa, baking soda and salt in a large bowl. Mix well.
In a small bowl, whisk together apple juice, water, butter, vinegar and vanilla. Pour into flour mixture and stir just until flour is moistened. Stir in chocolate chips.
Spoon into muffin cups. Bake at 375 degrees F for 20 to 25 minutes, or until the top springs back when gently touched. Cool.
Makes 1 dozen.
