These are yummy!
1 cup butter or margarine
4 squares bittersweet or semisweet chocolate
1 1/2 cups granulated sugar
1 cup flour
1/4 teaspoon salt
4 eggs, beaten
1 teaspoon vanilla extract
Heat oven to 300 degrees F.
In a saucepan over low heat, combine margarine and chocolate or in a double
boiler. Melt stirring frequently so the chocolate does not burn or stick.
In a bowl combine sugar, flour and salt. Stir in chocolate mixture. Beat
eggs then add them to the batter with the vanilla extract. Stir until eggs are
well blended (do not beat the mixture).
Line muffin tins with paper liners. Fill each one about 2/3 full. Bake for
30 to 40 minutes. Check to see if the muffins are done by inserting a wooden
pick in one near the center of the muffin.
