I made these a couple of mornings ago and they were surprisingly good! I've
never been a big fan of baked goods with carrots in them, but this was one of
the exceptions. These had a very nice aroma as they baked and the orange flavor,
as you mentioned in your message, was perfect.
The only thing I did differently was add a splash of whiskey and 1 teaspoon
of vanilla extract to the muffin batter. Next time, I'll also add about 1/2
teaspoon extra baking powder because my muffins didn't rise quite as much as
I would have liked them to. Thanks for posting a different and tasty recipe.

I found this on another site and tried it. It was so good I thought I would
share it with you. I can't remember the site I found it on. I wish I could.
I would like to thank the person who submitted this recipe. It does sound a
little strange because of the orange but they were very moist and the orange
taste was perfect. I used about 1 3/4 to 1 2/3 cups of sugar instead of what
the 2 cups the recipe calls for.
1 1/4 cups vegetable oil
2 cups granulated sugar
4 eggs
2 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking powder
Into food processor, chop up enough carrots for 2 cups.
Then: Wash an orange, cut it up and chop in the food processor rind and all.
Blend all the ingredients together and place in large muffin tins. Bake at 350
degrees F for 25-30 minutes.
Makes 18 large muffins or 24 regular size muffins.
