Chocolate Banana Nut Bread
Ingredients
- Nonstick oil spray
- 1/3 cup canola, vegetable, or corn oil, expeller pressed if possible
- 1 cup granulated sugar
- 2 cups unbleached, all-purpose flour
- Pinch of salt
- 1 teaspoon baking soda
- 2 medium size overly ripe bananas
- 2 large eggs, whisked together
- 1 cup chocolate chips
- 1 cup chopped walnuts
Instructions
- Grease an 8 x 4 1/2 x 2 1/2 inch loaf pan or muffin pan with nonstick spray.
- Heat oven to 350 degrees F.
- In a large bowl, cream oil and sugar together with a wooden spoon until well blended.
- Stir flour, salt, and baking soda together and add to oil and sugar mixture.
- Stir in bananas and eggs. Mix well to combine.
- Stir in chocolate chips and bananas and pour batter into prepared pan.
- Bake loaf for 1 hour, or until golden and cooked through.
