Chocolate Banana Nut Bread

Ingredients

  • Nonstick oil spray
  • 1/3 cup canola, vegetable, or corn oil, expeller pressed if possible
  • 1 cup granulated sugar
  • 2 cups unbleached, all-purpose flour
  • Pinch of salt
  • 1 teaspoon baking soda
  • 2 medium size overly ripe bananas
  • 2 large eggs, whisked together
  • 1 cup chocolate chips
  • 1 cup chopped walnuts

Instructions

  1. Grease an 8 x 4 1/2 x 2 1/2 inch loaf pan or muffin pan with nonstick spray.
  2. Heat oven to 350 degrees F.
  3. In a large bowl, cream oil and sugar together with a wooden spoon until well blended.
  4. Stir flour, salt, and baking soda together and add to oil and sugar mixture.
  5. Stir in bananas and eggs. Mix well to combine.
  6. Stir in chocolate chips and bananas and pour batter into prepared pan.
  7. Bake loaf for 1 hour, or until golden and cooked through.
