Coconut Bread with Coconut Butter
Ingredients
Bread
- 2 cups all-purpose flour
- 1 3/4 teaspoons baking powder
- 1/4 teaspoon salt
- 1 1/3 cups granulated sugar
- 1/4 teaspoon baking soda
- 2/3 cup vegetable oil
- 2/3 cup buttermilk
- 1/2 cup coconut flakes
- 2 large eggs
- 1 1/2 teaspoons coconut extract
- 1/2 cup chopped pecans
Coconut Butter
- 1 cup butter
- 1/4 cup cream of coconut
Instructions
- Heat oven to 325 degrees F. Spray bottoms of two 9 x 5 x 3 inch loaf pans.
Bread
- Mix all dry ingredients together.
- Add buttermilk, oil, coconut, eggs, coconut extract and nuts. Mix well with electric mixer.
- Bake for 1 hour.
Coconut Butter
- Mix with electric mixer until fluffy.
- Serve with coconut bread.
