Kiwi Cherry Bread recipe

3/4 cup brown sugar, packed
1/2 cup soft shortening
2 eggs
1 cup cooked kiwi, drained and chopped
1/4 cup kiwi juice
1/2 cup green candied cherries, halved
2 1/2 cups sifted flour
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt

Heat oven to 350 degrees F. Grease and flour a 9 x 5-inch loaf pan.

Beat together sugar, shortening and eggs until well blended. Stir in kiwi, juice and cherries.

Sift dry ingredients; blend into kiwi mixture. Turn into prepared pan. Bake for 1 hour or until done.

Cool in pan 5 minutes, then turn out on rack to complete cooling. This bread slices better the second day.
