1/2 cup margarine, softened
3/4 cup granulated sugar
1 egg
2 cups all-purpose flour
1 1/4 teaspoons ground nutmeg
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup buttermilk
In a mixing bowl, cream margarine and sugar. Add egg; mix well.
Combine the flour, nutmeg, baking powder and baking soda; add to creamed mixture alternately with buttermilk. Pour into a 9 x 5-inch loaf pan that has been coated with nonstick cooking spray. Bake at 350 degrees F for 45 to 50 minutes or until a wooden pick inserted near the center comes out clean.
Cool in pan 10 minutes before removing to a wire rack to cool completely.
Yields 1 loaf (16 slices).
