Bisquick Coffee Cake

We have seen a recipe that added cinnamon to the batter and doubled the topping recipe. We tried it, but didn't care for it. Absolutely nothing beats this original recipe from the Bisquick box.

Bisquick Coffee Cake recipe

Ingredients

Cake

  • 2 cups Bisquick
  • 2 tablespoons granulated sugar
  • 1 egg
  • 2/3 cup water or milk
  • 1 teaspoon vanilla extract (optional)*

Topping

  • 1/3 cup Bisquick
  • 1/3 cup firmly packed brown sugar
  • 1/2 teaspoon cinnamon
  • 2 tablespoons cold butter

Instructions

Cake

  1. Mix all ingredients.
  2. Sprinkle Topping over the top.
  3. Bake in a greased 9 inch round pan or 9 inch pie tin* at 400 degrees F for 20 minutes.

Topping

  1. Mix until crumbly.

Notes

* Vanilla extract is not in the original recipe, but I think it makes a lot of difference. I always add it.

If using a 9 inch pie pan, it should be 1 1/2 to 2 inches deep.

1/2 cup chopped walnuts or pecans may be added to the Topping, if desired.

1/2 to 1 cup blueberries may be added to the batter, if desired.
