Caramel Apple Coffee Cake

Ingredients

Cake

  • 3 eggs
  • 2 cups granulated sugar
  • 1 1/2 cups vegetable oil
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon, baking soda
  • 3 cups chopped peeled apples
  • 1 cup chopped pecans

Topping

  • 1/2 cup butter
  • 1/4 cup milk
  • 1 cup packed brown sugar

Instructions

  1. In a mixing bowl, beat eggs until foamy; gradually add sugar.
  2. Blend in oil and vanilla extract.
  3. Combine flour, salt and baking soda; add to egg mixture.
  4. Stir in apples and pecans.
  5. Pour into a greased 10-inch tube pan; bake at 350 degrees F for 1 hour 15 minutes or until the cake tests done.
  6. Cool in pan on a wire rack for 10 minutes.
  7. Remove cake to a serving platter.
  8. For topping, combine all ingredients in a saucepan; boil for 3 minutes, stirring constantly. Slowly pour over warm cake.
