Milkless Pancakes or Waffles

This batter will not store well, so use it all or freeze the leftovers for another day. They are good reheated in the microwave or oven. This is a lifesaver if you are out of milk or cannot tolerate milk.

2 cups biscuit or pancake mix
1 egg, beaten
1/2 cup vegetable oil
1 cup club soda or ginger ale

Blend egg and oil in medium bowl. Pour in club soda or ginger ale. Fold in biscuit mix. It should be slightly lumpy. Heat griddle to 425 degrees F or use a heavy frying pan over medium heat. Make small or large pancakes. Batter can also be used on a heated waffle iron.
