I don't care much for frosting, but this one is light and doesn't seem quite as sugary as most. It's wonderful on banana cake!
1 package (4 serving size) vanilla instant pudding mix
1/4 cup confectioners' sugar
1 cup cold milk
1 (8 ounce) container Cool Whip
Combine pudding mix, sugar and milk in a small bowl. Beat slowly with a rotary beater or at lowest speed of an electric mixer until well blended, about one minute. Fold in whipped topping. Spread on cake at once.
Makes about 4 cups or enough for two 9-inch layers. Frosted cake should be refrigerated. For firmer frosting let pudding mixture stand 5 minutes before adding Cool Whip.
