Batter:
3 tablespoons vegetable oil
1 beaten egg
Pinch of salt
1/2 cup milk
3/4 cup granulated sugar
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon vanilla extract
Fruit Layer:
4 cups fresh fruit, sliced
1small box Jell-O
2 tablespoons granulated sugar (only if using rhubarb)
Topping:
1/4 cup all-purpose flour
1/2 cup granulated sugar
1 teaspoon cinnamon
3 tablespoons butter
Combine batter ingredients. Place in a greased 9 x 13-inch pan.
Combine fruit layer ingredients and spread evenly over batter.
Crumble together topping ingredients and sprinkle over fruit layer.
Bake at 375 degrees F for 35-40 minutes.
