Banana Nut Bread
Ingredients
- 1 (18.25 ounce) box yellow cake mix*
- 4 ounces cream cheese, softened
- 2 eggs
- 3 medium bananas, peeled and mashed
- 3/4 cup chopped nuts
Instructions
- Heat oven to 350 degrees F. Grease two 8 1/2 x 4 1/2 inch loaf pans.
- Put cream cheese and eggs into small mixer bowl and blend at low speed until smooth.
- Add mashed bananas and mix well.
- Put half the dry cake mix into a large bowl; add banana mixture and beat until blended.
- Add remaining cake mix and nuts; mix just until blended.
- Divide batter evenly between the pans.
- Bake for 35 to 45 minutes or until a wooden pick inserted in the center comes out clean.
- Cool for 20 minutes in the pans.
- Remove from pans and cool on rack.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
