Applesauce Spice Cake

Ingredients

Cake

  • 1 (18.25 ounce) box spice cake mix*
  • 3 eggs
  • 1 1/4 cups applesauce
  • 1 cup chopped nuts
  • 1/3 cup vegetable oil

Frosting

  • 1 (16 ounce) container vanilla frosting
  • 1/2 teaspoon cinnamon

Instructions

  1. Heat oven to 350 degrees F. Grease and flour a 13 x 9-inch pan.

Cake

  1. Combine cake mix, eggs, applesauce and oil in large bowl. Beat at medium speed with electric mixer for 2 minutes.
  2. Stir in nuts. Pour into pan.
  3. Bake for 40 minutes or until wooden pick inserted in center comes out clean.
  4. Cool in pan for 15 minutes.
  5. Invert onto cooling rack. Turn right-side up. Cool completely.

Frosting

  1. Combine frosting and cinnamon. Stir until blended. Spread over cooled cake.
  2. Dust frosting with a light coat of cinnamon.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
