Bacardi Chocolate Rum Cake
DO NOT SERVE TO CHILDREN!
Ingredients
- 1 (18.25 ounce) box chocolate cake mix*
- 1 small box instant chocolate pudding mix
- 4 eggs
- 1/2 cup dark Bacardi
- 1/2 cup cold water
- 1/2 cup oil
- 1 1/2 cups cold milk
- 1/2 cup dark Bacardi
- 1 small box instant chocolate pudding mix
- 1 package Dream Whip (single envelope)
Instructions
- Heat oven to 350 degrees F. Grease and flour two 9 inch cake pans.
- Combine first 6 ingredients in large bowl. Blend well then beat on medium for 2 minutes.
- Pour into prepared cake pans.
- Bake for 30 minutes, or until done. Set aside to cool completely before frosting.
- In chilled bowl, mix remaining 4 ingredients. Mix well, then beat on high speed (whip cream) until light and fluffy.
- Cut each layer horizontally and frost.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
