Cherry Mallow Cake
You'll love the simplicity of this cake - the marshmallows melt and rise to the top for a ready-made glaze.
Yield: 15 servings
Ingredients
- 4 cups miniature marshmallows
- 1 (18.25 ounce) box yellow cake mix*
- 1 (21 ounce) can cherry pie filling
Instructions
- Heat oven to 350 degrees F (175 degrees C). Spray a 13 x 9 x 2 inch baking pan with vegetable cooking spray. Place marshmallows evenly in the bottom of the pan.
- Prepare cake mix according to package directions.
- Pour batter over marshmallows.
- Spoon cherry filling evenly over cake batter.
- Bake for oven 45 to 50 minutes. The top of the cake will be bubbly and the marshmallows will be sticky on top of the cake.
- Let cool in the pan, then cut into squares.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
