Lemonade Cupcakes
Yield: 24 cupcakes
Ingredients
- 1 (15.25 ounce) box lemon cake mix
- 1 cup water
- 3 eggs
- 1/2 cup vegetable oil
- 1 (0.23 ounce) package lemonade unsweetened drink mix (optional)
- 1 (16 ounce) container lemon frosting
- Lemon slices, for decorating
Instructions
- Heat oven to 350 degrees F. Place paper liners in 24 regular-size muffin cups.
- Beat cake mix, water, eggs, oil and drink mix (if using) in a large bowl with an electric mixer on low speed until moistened, about 30 seconds. Beat on medium speed for 2 minutes.
- Divide batter evenly among muffin cups. Bake for 16 to 19 minutes, until a wooden pick inserted in centers comes out clean.
- Cool on wire rack for 15 minutes.
- Remove from pans and cool completely.
- Frost cooled cupcakes with lemon frosting. Decorate with lemon slices.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
