Peter Paul Mounds Cake
Ingredients
Cake
- 1 (18.25 ounce) box chocolate cake mix*
Filling
- 1 cup granulated sugar
- 24 large marshmallows
- 1 cup milk
- 1 (7 ounce) package coconut
Icing
- 2 tablespoons cocoa or 2 squares unsweetened chocolate
- 1/2 cup (1 stick) butter
- 16 large marshmallows
- 1 box confectioners' sugar
- Milk
Instructions
Cake
- Bake as directed on box for a two-layer cake.
Filling
- Cook milk, sugar and marshmallows until melted.
- Add coconut. Spread between layers and on top of cake.
Icing
- Melt together chocolate, butter and marshmallows.
- Add confectioners' sugar and enough milk to get to spreading consistency.
- Ice cake.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
