Speckled Banana Cake
Yield: 1 1/3 cups frosting
Ingredients
Cake
- 1 (18.25 ounce) box yellow cake mix (NO PUDDING)*
- 1 small box instant banana pudding
- 1 cup hot water
- 1/2 cup vegetable oil
- 4 eggs
- 1/4 cup poppy seeds
Caramel Frosting
- 1/4 cup butter
- 3 tablespoons milk or cream
- 1/2 cup firmly packed brown sugar
- 1 1/2 cups confectioners' sugar
Instructions
- Heat oven to 350 degrees F.
Cake
- ombine first 4 ingredients in bowl and beat well.
- Add eggs, one at a time, beating well, after each addition.
- Stir in poppy seeds.
- Pour mixture into greased and floured** 10-inch tube pan.
- Bake for 55 to 60 minutes, checking after 45 minutes, or until cake tests done.
- Cool in pan for 10 minutes; remove from pan and finish cooling on a rack.
Caramel Frosting
- Combine the butter, milk and brown sugar in a aucepan, and bring to a boil; boil for 2 minutes.
- Remove from heat and cool completely.
- Beat in confectioners' sugar until smooth and of spreading consistency. Add more milk or confectioners' sugar as required if it is necessary to bring it to the proper consistency.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
