Speckled Banana Cake

Yield: 1 1/3 cups frosting

Ingredients

Cake

  • 1 (18.25 ounce) box yellow cake mix (NO PUDDING)*
  • 1 small box instant banana pudding
  • 1 cup hot water
  • 1/2 cup vegetable oil
  • 4 eggs
  • 1/4 cup poppy seeds

Caramel Frosting

  • 1/4 cup butter
  • 3 tablespoons milk or cream
  • 1/2 cup firmly packed brown sugar
  • 1 1/2 cups confectioners' sugar

Instructions

  1. Heat oven to 350 degrees F.

Cake

  1. ombine first 4 ingredients in bowl and beat well.
  2. Add eggs, one at a time, beating well, after each addition.
  3. Stir in poppy seeds.
  4. Pour mixture into greased and floured** 10-inch tube pan.
  5. Bake for 55 to 60 minutes, checking after 45 minutes, or until cake tests done.
  6. Cool in pan for 10 minutes; remove from pan and finish cooling on a rack.

Caramel Frosting

  1. Combine the butter, milk and brown sugar in a aucepan, and bring to a boil; boil for 2 minutes.
  2. Remove from heat and cool completely.
  3. Beat in confectioners' sugar until smooth and of spreading consistency. Add more milk or confectioners' sugar as required if it is necessary to bring it to the proper consistency.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
