Banana Marshmallow Squares

Ingredients

Crust

  • 1 (18.25 ounce) box yellow cake mix*
  • 1/2 cup butter
  • 2 eggs
  • 1 cup nuts, chopped

Filling

  • 3 1/4 cups miniature marshmallows
  • 1 small box Instant vanilla pudding
  • 2 ripe bananas, mashed

Instructions

Crust

  1. Heat oven to 350 degrees F. Grease a 9 x 13 inch baking pan.
  2. In large bowl combine cake mix, butter, eggs and nuts. Blend well. Press 1/2 into bottom of pan; reserve remaining for topping.

Filling

  1. In double boiler, melt marshmallows, stirring constantly, until smooth.
  2. Add dry pudding mix and bananas to melted marshmallows. Spread evenly over dough.
  3. Crumble remaining dough over filling.
  4. Bake for 20 to 25 minutes or until dough is golden brown.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
