Cool Whip Cookies

These three-ingredient cookies are wonderful additions to cookie trays. Any flavor cake mix can be used; strawberry (shown), chocolate, lemon, cherry, pineapple, etc.

Ingredients

  • 1 (18.25 ounce) box any flavor cake mix*
  • 1 (8 ounce) container Cool Whip, thawed
  • 1 egg
  • Confectioners' sugar

Instructions

  1. Mix cake mix, Cool Whip and egg together in a bowl.
  2. Drop by teaspoonsful into confectioners' sugar.
  3. Place on cookie sheet.
  4. Bake at 350 degrees F for 12 to 15 minutes.
  5. Let cool before removing from cookie sheet.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
