Gooey Coconut Bars
Ingredients
- 1 (18.25 ounce) box French vanilla cake mix*
- 2 eggs
- 1/2 cup (1 stick) butter, melted
- 8 ounces cream cheese, softened
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 (16 ounce) box confectioners' sugar
- 1 1/2 cups shredded coconut
Instructions
- Heat oven to 350 degrees F. Spray a 13 x 9 inch baking pan with Pam.
- Combine first 3 ingredients. Press into bottom about 1 inch up the sides of prepared baking pan.
- Mix together next 6 ingredients and pour over crust.
- Bake for 45 minutes, or until golden brown on top.
- Let cool completely to set, and cut into small squares.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
