Soft Oreo Cookies

Ingredients

Cookies

• 2 (18.25 ounce) boxes devil's food cake mix*
• 4 eggs
• 1/2 cup shortening

Filling

• 3 cups confectioners' sugar
• 8 ounces cream cheese
• 1/2 cup butter

Instructions

Cookies

1. Cream together eggs and shortening; slowly add cake mixes. Roll dough into 1 inch balls and place on cookie sheet.
2. Bake at 350 degrees F for 8 to 10 minutes.
3. To flatten cookies, tap cookie sheet on hard surface immediately after removing from the oven.
4. Let cookies cool, then spread filling between two cookies.

Filling

1. Mix together ingredients and sandwich between two cookies.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 15.25 ounce boxes. To compensate for the volume loss, whisk 6 tablespoons all-purpose flour into each dry cake mix before proceeding with the recipe.
