Coconut Revel Cupcakes recipe

Cream Cheese Mixture:
1/4 cup granulated sugar
1 teaspoon vanilla extract
8 ounces cream cheese, softened
1 egg
3/4 c coconut
1/2 cup semisweet chocolate chips

Cake:
1 (18.25 ounce) box devil's food cake mix
1 1/4 cups water
1/3 cup vegetable oil
3 eggs

Glaze:
1/2 cup semisweet chocolate chips
3 tablespoons butter

Heat oven to 350 degrees F. Line 36 muffin cups with paper baking cups.

Cream Cheese Mixture: In small bowl, beat together sugar, vanilla extract, cream cheese and egg. Stir in coconut and chocolate chips. Set aside.

Cake: In large bowl blend cake mix, water, oil and eggs. Beat at highest speed for 2 minutes.

Fill cupcake pans half full with cake mix. Top each with a heaping teaspoon of cream cheese mixture. Bake 20-30 minutes. Remove from pans, cool completely.

Glaze: Melt chocolate chips and butter over low heat. When smooth, drizzle scant teaspoons of glaze over cupcakes.
