Coconut Pound Cake
Ingredients
Cake
- 1 cup (2 sticks) butter
- 1/2 cup shortening
- 3 cups granulated sugar
- 6 eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 cup milk
- 1 1/2 cups coconut
Glaze
- 1 cup granulated sugar
- 1/4 cup (1/2 stick) butter
- 1/2 cup evaporated milk
- 1 teaspoon vanilla extract
- 1 cup coconut
Instructions
Cake
- Cream butter, shortening and sugar together.
- Add eggs, one at a time.
- Add vanilla extract.
- Add flour and milk alternately.
- Mix in coconut.
- Bake in a greased and floured* tube pan for 1/2 hour at 275 degrees F.
Glaze
- Boil all ingredients except coconut for 2 minutes.
- Add coconut.
- Spread mixture over cake and let cool.
