Do Nothing Cake

This is a very moist cake!

Do Nothing Cake recipe

Ingredients

Cake

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 cups granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 (20 ounce) can crushed pineapple with juice (do not drain)

Coconut-Pecan Frosting

  • 1 stick butter (8 tablespoons)
  • 1 cup granulated sugar
  • 3/4 cup evaporated milk
  • 1 cup chopped pecans or walnuts
  • 1 to 1 1/2 cups shredded coconut

Instructions

  1. Heat oven to 350 degrees F. Grease a 13 x 9 inch baking dish.

Cake

  1. In a large bowl, whisk together all the cake ingredients until just combined. Pour into prepared baking pan, and bake for 30 to 40 minutes or until a wooden pick inserted in the middle comes out clean. Do not overbake.
  2. While the cake is still baking, prepare the frosting.
  3. Remove the cake from oven and, using a kabob skewer or wooden spoon handle, begin poking holes in the cake.
  4. Pour frosting over the hot cake, spreading it out to make sure it's evenly dispersed.
  5. Allow cake to cook for a bit before cutting.

Coconut-Pecan Frosting

  1. Bring butter, sugar and milk to a boil in a pan on top of the stove. Cook and stir about 3 minutes.
  2. Remove from heat and stir in nuts and coconut. Pour over hot cake.
